Creamy Mustard & Herb Salmon

This easy recipe is not only healthy but it’s satisfying and full of flavor. It looks pretty fancy and it’s a perfect dish to impress the family!

Pair your creamy Dijon mustard & dill salmon with a refreshing salad or even roasted vegetables on the side.



Ingredients:

  • 3 Tablespoons of Dijon Mustard

  • 3 Tablespoons of Rice Vinegar

  • 3 Tablespoons of Fresh Dill

  • ~ 2lbs of Salmon Fillets

  • Salt & Pepper to Taste

  • Foil-lined Baking Tray

Yields: 4 People
Prep Time:  5 Minutes
Cook Time: 10 -12 Minutes
Serve With: Lemon Wedge, Salad, Pickled Beets, or Roasted Vegetables.


Directions:

  1. Preheat oven to Broil on High.

  2. Line a baking sheet with aluminum foil and spritz lightly with cooking spray.

  3. Sprinkle salt & pepper on both sides of salmon fillets and place skin side up on foil-lined baking sheet.

  4. In a small bowl, combine the Dijon mustard, rice vinegar, and dill. Stir until smooth and evenly combined. Set mixture to the side.
    (Tip: Save some dill for garnish.)

  5. Place tray with salmon fillets in broiler (bottom of oven). Let salmon skin broil for approximately 2 or so minutes or until salmon skin is delicately crisp.
    (Tip: Carefully and constantly watch salmon when in bottom broil drawer to avoid over crisping.)

  6. When salmon skin is crisp, flip salmon skin side down on tray and spread dill mixture evenly over top of the salmon fillets. Place tray in the oven (still on Broil setting but not on bottom drawer) for 7 to 10 minutes, or until salmon flakes easily with a fork.

  7. Garnish with more dill or additional herbs over top of salmon and a lemon wedge on the side. Enjoy!
