"PB"&J Smoothie

I am sure we can all relate to those days where we crave sweets! Well, when I made this smoothie, I was having one of those days. In order to keep me from going over the edge, I decided, why not making a “PB”&J smoothie. To keep this recipe Paleo-friendly, I swapped the peanut butter for cashew butter which is also creamy and delectable. However, you can certainly put the “PB” back in peanut butter for this recipe. I also used coconut yogurt instead of milk and went for Agave instead of refined sugars.


There is a little bit of an art to making this smoothie resemble a PB&J layer. First, you want to freeze your bananas with the skin the night before. I do this anyway since I make a ton of smoothies for my family. The next morning you will be ready for this smoothie! To get started, you want to blend all the ingredients, excluding the acai & blueberries (basically this turns everything purple right away). Once you have the “PB” layer, you want to pour half of what’s in the blender into cups. Then with the remaining “PB” layer in your blender, you want to add the acai powder and blueberries to make the “jelly” portion of this smoothie. Pour this in your cups and you’ll have a layered PB&J smoothie!

Ingredients:

  • 3 Frozen Bananas

  • 1 Can of Coconut Milk

  • 1/2 Cup of Coconut Yogurt

  • 1 Cup of Peanut Butter (Almond Butter for Paleo)

  • 1 Tablespoon of Agave or Other Organic Sweetener

  • 1/4 Cup of Acai Powder

  • 1 Cup of Blueberries

  • 1 Banana Nut Muffin Crumbled or other toppings (Optional)

  • Blender

Yields: 6 Small Jars
Prep Time:  10 Minutes
Chill Time: 4 Hours or Overnight

Directions:

  1. The night before, freeze bananas with the peel off.


  2. The next morning, you’ll start with the “PB” layer. Add all your ingredients in the blender, except for the acai powder, blueberries, & toppings. Blend until smooth and pour half of the mixture into individual cups.


  3. Now with the remaining “PB” layer in the blender, add your acai powder and blueberries. Blend until smooth and pour the remaining mixture over top of the “PB” layer in your cups.


  4. Finish with more blueberries and or a crumbled banana nut muffin. Enjoy!
