Holiday Pear Pie Deconstructed

It’s the first day of December and I can’t help to think of the song, The Twelve Days of Christmas! To commemorate the, “Partridge in a Pear Tree” here is a delicious good-for-you pear dessert that you won’t have to over think when it is deconstructed!

I’ve made this dessert Paleo friendly, however, if you need to substitute some ingredients for regular brown sugar vs. coconut sugar or cornstarch instead of arrow root flour, or regular whipped cream instead of dairy-fee, by all means make it your own! Happy Holidays!

Directions:

  1. Lightly toast almond flour in a pan on medium-high heat. Be sure to toss frequently (1-2 mins). Place in bowl when toasted.

  2. Toast pecans in a pan for 1-2 minutes and then crush pecans into small bits and place in bowl with toasted almond flour.

  3. Mix remaining crust ingredients in bowl and then transfer and press down in a pie dish. Let cool in the refrigerator as you’re working on the filling.

  4. Dice pears & toss with lemon juice in a large bowl.

  5. In a separate bowl, combine brown sugar, cinnamon, nutmeg and mix to combine.

  6. Transfer pears to a saucepan & heat over med-high heat for 8-10 minutes.

  7. When pears are cooked down and mixture is thick, add your dry mixture & whisk to combine to incorporate well.

  8. Heat & stir constantly until mixture thickens - about 2 minutes.

  9. Remove from heat & let sit 5 minutes before transferring into your pie dish.

  10. When you’re ready to serve, transfer portions into bowl or jars and top with dairy-free whipped cream and drizzle honey over top! Happy Holidays!
