Easy Leftover Chinese Food Frittata

My family was hungry this morning and all we had left in the fridge was half eaten cartoons of leftover Chinese Food from our favorite restaurant, House of Wah Sun! If you’re ever in Chicago on the North Side, you should check out this hole in the wall. Awesome American Chinese food accompanied by old school tikki bar drinks!

If you have any leftover Chinese food in the fridge, try what I did. I took the leftover veggies and meat from our Pork Lo Mein Noodles, then six shrimp that we had from our other cartoon of Salt & Pepper Shrimp, followed by the filling from a lonesome pork dumpling. I heated the leftovers up, added them to my egg mixture, and Ta-Da…Chinese food frittata!

Ingredients

  • Leftover Chinese Food

  • 6 Eggs

  • 2 Tablespoons of Olive Oil

  • Salt & Pepper to Taste

  • 1 Large Non-Stick Pan

Serves:  2 - 4 People
Prep Time:  5 Minutes
Cook Time: 10 Mins
Serve w/:  Coffee or Your Favorite Morning Beverage

Directions

  1. Heat the olive oil in pan. Add the leftover Chinese food veggies and meat on medium-high heat (chop into smaller pieces, if needed), stirring occasionally, for a few minutes until veggies & meat are reheated. While leftovers are reheating, beat 6 eggs in a bowl with salt and pepper to taste.

  2. Once leftovers are reheated, remove from pan and set aside. Add more olive oil in the pan, if needed, then add the egg mixture to the pan. Heat egg mixture on Medium-Low heat and cover with a lid. Let egg mixture cook slowly.

  3. Once the egg mixture is almost done cooking, add the leftovers on top of the egg mixture and allow the top of the mixture to bind the ingredients.

  4. When the top of the egg mixture is cooked, remove from heat. Slide on to a serving plate.

  5. Crack some pepper over the frittata and serve!
