Paleo Feels like Fall Meat Loaf

You know those fall days when you’re home and cozy and feel a little nostalgic of fall days as a kid? This recipe is looking for you… Here is, “It Feels like Fall Meatloaf”, Paleofied.


Ingredients

  • 1.5lbs Organic Ground Chuck (80/20)

  • 1.5lbs Organic Ground Pork

  • 3 Cups Diced Yellow Onions

  • 2 Cups Torn Spinach

  • 1 Teaspoon Dried Oregano

  • 1 Teaspoon Dried Thyme

  • 1 Teaspoon Ground Black Pepper

  • 2 Teaspoons Kosher Salt

  • 4 Tablespoons of Worcestershire Sauce

  • 4 Cloves of Minced Garlic

  • 1 Tablespoon Garlic Powder

  • 1 Tablespoon Onion Powder

  • 1 Tablespoon Tomato Paste

  • 1/3 Cup Chicken Stock or Broth

  • 2 Large Eggs

  • 1/2 Cup *Ketchup (Homemade Paleo Ketchup Preferred)

  • 1/2 Cup Almond Flour

  • 1-2 Tablespoon Olive Oil

  • Salt & Ground Pepper to Taste

  • 1 Foiled 11x7 or larger Rectangular Sheet Pan

Serves:  4 - 6 People
Prep Time:  15 Minutes
Cook Time: 1 Hour 30 Mins
Serve w/:  Mashed Cauliflower, Mashed Red Potatoes, or Sautéed Spinach

Directions

  1. Preheat the oven to 325 degrees F.

  2. Heat the olive oil in a medium saute pan. Add the onions, thyme, oregano, minced garlic, 1/2 Tablespoon of onion powder, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown.

  3. Lower heat and add the Worcestershire sauce, chicken stock, tomato paste and stir until tomato paste is incorporated.

  4. Add spinach leaves and stir with onion mixture until wilted. Allow to cool slightly.

  5. In a large bowl, combine the ground chuck, ground pork, onion mixture, almond flour, eggs, the rest of the onion and garlic powder then mix lightly with your hands. Don't over mash or over mix mixture to avoid a dense meat loaf. Shape the mixture into a rectangular log that spans the foiled sheet pan.

  6. Spread the ketchup evenly on top. Bake for 1 1/2 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through.

  7. At this time, concentrate on side dishes to make while your meat loaf is in the oven.

  8. Check meatloaf by inserting meat thermometer at end of loaf so that it reads closer to middle of loaf. When internal temperature reaches 160 degrees F, you’re ready to serve!
