German Red Cabbage

My husband and I love to cook and we are always looking for inspiration to dream up our next meal. We were watching Top Chef: All-Stars L.A. the other night and a chef made braised red cabbage. I turned to my husband and said, “Heyyy, we haven’t had German food in a while, let’s cook German food tomorrow night!”

We were on a mission to make German Red Cabbage (A.K.A. Rotkohl or Blaukraut) which is a mild sweet and sour (good for your gut) German side dish. This recipe is easy to make and has simple ingredients. It’s a perfect side to pair with your German feast.

With every meal we make together, we try to keep it as healthy as possible. So, here is our healthy German Red Cabbage recipe if you’re in the mood for something a little bit different within your cooking repertoire. We recommend pairing this recipe with a Beef Rouladen or German Pork Schnitzel.

Ingredients

  • 2 Bags of Shredded Red Cabbage or 1 /2 Head of Shredded Red Cabbage

  • 1 Diced Green Apple or Any Apple Type Handy

  • 2 Tablespoons of Ghee or Butter

  • 1 Small White Onion, Finely Diced

  • 1/3 Cup Organic Unfiltered Raw Apple Cider Vinegar

  • Optional: 2 Tablespoons Sugar or Organic Apple Sweetener, Recommended Dolcedi Brand

  • Salt and Pepper to Taste

  • Dutch Oven or Large Pot

    Prep Time: 5 mins
    Cook Time: 15-30 mins
    Serve w/: Beef Rouladen or Pork Schnitzel


Directions

  1. Start by dicing the onions and apples. If you did not buy bags of shredded red cabbage, begin shredding cabbage.

  2. Heat your pot on High and add your butter or ghee. Saute your onions and apples until they start to soften.

  3. Lower heat to Medium-High and then add all your cabbage to your onion and apple mixture. Continue to saute until cabbage starts to wilt, 5 -7 mins.

  4. Add your apple cider vinegar, apple sweetener (optional), salt, and pepper and continue sauteing. Let cabbage continue to cook covered for 15-30 mins on Low heat.
    (Tip: If you’re making my Paleo Pork Schnitzel this would be the perfect time to start prepping this dish.)


  5. When cabbage is a nice bright purple and cooked down, you’re done! Taste to see if you need a dollop of ghee or butter before serving! genießen!
