Paleo Instant Pot Sweet & Sour Meatballs

This super fast Instant Pot meatball recipe was inspired by my good friend’s Little Kids Hanukkah party last December. When trying to keep on my paleo diet and resist temptation on the delicious matza ball soup and Hanukkah treats that my friend would have out at the party, I asked myself, “what’s a Jewish staple appetizer that I can bring and make paleo?” Since I am not familiar with signature Jewish food during the holidays, I had to look up some app ideas to bring. To my surprise, Sweet & Sour Meatballs were on the list! Who would have thought?! All this time, I thought this recipe was inspired by Hawaii. Ha!

At this point, I had about twenty minutes to make a dish to bring and get the family out the door to head to the party. Let’s just say, I had time to make these delicious meatballs (thanks to my Instant Pot), bake sugar cookies (pre-made dough, of course) and sprinkle with blue and silver confetti! So, if you’re looking for a crowd-pleasing appetizer for a party or a super quick meal on a busy week day, try this Paleo Sweet & Sour recipe.

Ingredients

  • 2 Bags of Organic Angus Beef Frozen Cooked Meatballs (26oz each)

  • 1 Cup Tomato Sauce

  • 1 Cup *Ketchup (No Sugar Added Ketchup Preferred)

  • 1/4 Cup RAW Organic Apple Cider Vinegar- Unfiltered

  • 1 Cup Coconut Sugar

  • 1/4 Cup + 1 Tablespoon of Organic Honey

  • 2 Tablespoons of Onion Powder

  • 2 Tablespoon of Garlic Powder

  • 2 Teaspoons of Paprika

  • 1/2 Cup of Water

  • Salt & Pepper to Taste

  • Electric Pressure Cooker




    Feeds: 10 -12 People
    Prep Time: 5 Minutes

    Electric Pressure Cook Time: 8 Minutes

  • (This recipe could also be made in the slow cooker on medium - high for 2 hours. However, be sure to add 1/2 cup of water to thin mixture before setting and forgetting.)


    Optional: If you can’t imagine sweet & sour meatballs without pineapple, substitute the honey for a small frozen bag of pineapple chunks.



Directions

  1. Dump 2 bags of your favorite frozen cooked meatballs in your electric pressure cooker.

  2. In a bowl, mix all the other ingredients. When ingredients are thoroughly mixed, pour on top of the meatballs and lightly stir to coat each meatball.

    (Tip: If the mixture appears too thick, add 1/4 Cup of Water to thin out the mixture.)


  3. Close the electric pressure cooker lid and set setting to Pressure Cook on High temperature for 8 minutes.

  4. When the electric pressure cooker is finished cooking, push button to release steam and uncover.

  5. Keep meatballs in the electric pressure cooker to serve or place meatballs in a serving dish! L' Chaim!
