Ooey Gooey Blackberry Cobbler

The story behind this dish was that I simply wanted something Ooey & Gooey and blackberries were on sale at the market. All signs were pointing to make an easy warm and mouthwatering cobbler dessert!

Friends of mine are always so intrigued about swapping their all-purpose flour and granulated sugar for healthy coconut substitutes for baking. It took a cold turkey approach for me a few years back and I ditched all processed foods, bleached ingredients, etc. out of my pantry. When you make the decision to cook or bake with healthy ingredients, it will become second nature and so rewarding in the end. Enjoy this recipe!

Filling Ingredients:

  • 3 Cups of Fresh Blackberries

  • 1/3 Cup Coconut Sugar

  • 4 Tablespoons of Organic Maple Syrup (Save 2 Tablespoons for Drizzle on Cobbler)

  • 1 Teaspoon Vanilla

  • 1/4 Teaspoon Cinnamon

  • 1/8 Teaspoon Salt

  • 8x8 / 7x10 Ceramic or Glass Dish

Topping Ingredients:

  • 1/2 Cup Coconut Oil

  • 1/2 Cup Coconut Flour

  • 1/4 Cup Coconut Sugar

  • 4 Eggs

  • 1 Teaspoon Vanilla

  • 1/4 Teaspoon Baking Powder

  • 1/4 Teaspoon Salt

Serves:  4 People
Prep Time:  10 Minutes
Cook Time: 25-27 Minutes


Directions:

  1. Preheat your oven to 400 degrees F.

  2. In your baking dish, mix all filling ingredients.

  3. In a separate bowl, whisk together all topping ingredients. Then pour evenly over blackberry filling in your baking dish.

  4. Bake in your oven for 25-27 minutes.

  5. Then let your dish cool for 5 minutes and drizzle the remaining organic maple syrup evenly over individual servings. Enjoy with people you love!
