Cucumber Banana Pepper Dill Salad

On a Summer day a refreshing cucumber banana pepper dill salad is the perfect accompaniment to a grilled meal.

This recipe is super easy, tangy, and a fan favorite!


Ingredients:

  • 1 Large Cucumber

  • 1 Banana Pepper, Deseeded

  • 2-4 Tablespoons of Fresh Dill

  • 1/4 Cup of Rice Wine Vinegar

  • Salt to Taste

  • 2 Teaspoons of Olive Oil / Avocado Oil

  • Mandoline (Optional)

Yields: 4-6 Servings
Prep Time:  5 Minutes

Directions:

  1. Use a mandoline to slice cucumbers and banana peppers very thinly. Then add them to a bowl.

  2. Add the rest of the ingredients in a bowl, then toss lightly.

  3. Refrigerate until you’re ready to serve! Enjoy!
