Mediterranean Chicken Salad w/ Zesty Lemon Garlicky Dressing

This easy recipe is whatever you want it to be! I took a few short cuts and plated it in a way that is diy and appetizing for a family dinner. Pick your favorite salad toppings and top it off with this full of flavor bite-size Mediterranean spiced chicken and drizzle with a decadent zesty lemon garlicky dressing. This recipe is a hit for entertaining too!

Salad Ingredients:

  • 1 Head of Lettuce or Salad of Choice

  • 4 Plum Tomatoes; Diced

  • 2 Cucumbers; Diced

  • 1/2 Bunch Fresh Flat Parsley

  • 1/2 Bunch Fresh Dill

  • Red Onion; Few Slices

  • 1/2 - 1 Cup of Feta Cheese; Crumble

Lemon Garlicky Dressing Ingredients:

  • Zest of 1/2 a Lemon

  • 2 Lemons; Squeezed

  • Drizzle of Olive Oil

  • 1 Garlic Clove; Smashed

  • 1/8 Teaspoon Garlic Salt (Opt)

  • Salt & Pepper

  • 1/2 -1 Teaspoon of Sugar of Choice

Chicken Ingredients:

  • 1lb Skinless Chicken Breasts (~3 large)

  • 3 Tablespoons Wholefoods Istanbul Seasoning

  • Drizzle of Olive Oil

  • 1 Teaspoon Garlic Powder

  • 1 Teaspoon Onion Powder

  • 1/2 Teaspoon Garlic Salt (Optional)

  • Salt & Pepper

Yields: 4 People
Prep Time:  15 Minutes
Cook Time: 10 Minutes
Pair With: Baba ganoush (see my recipe + add 40 minutes to cooking time) or Store bought Hummus


Directions:

  1. FYI, If you’re making my baba ganoush recipe preheat oven and start with this recipe first.

  2. Chop all salad ingredients and place on platter or bowl.

  3. In a separate bowl, combine all salad dressing ingredients, stir, and set aside.

  4. Dice chicken in 1” bite-size pieces and place in a bowl. Add seasonings and drizzle with olive oil. Mix.

  5. Add 2 tablespoons of olive oil and heat sauté pan until hot. Add an even layer of chicken when pan is hot! Lower heat to medium high and let chicken cook for 3-5 minutes (without stirring). The top of the chicken should almost look like it’s cooked and then you want to flip and stir. This will ensure that the chicken is slightly browned on the bottom. Cook for another 3-4 minutes until no longer pink.

  6. Plate chicken in a separate side bowl or until cooled and ready to serve. Enjoy!
