Tostones w/ Garlic Dipping Sauce


If you’re looking for a Latin fan-favorite side dish, then look no further! Green plantains- twice fried, also known as Tostones, is the perfect accompaniment to a Latin dish. Serve with a yummy garlic dipping sauce that will make any guest craving more and more!

Ingredients:

  • 3 Green Plantains

  • Avocado oil or Vegetable Oil

  • 1/4 Cup Olive oil

  • Salt to Taste

  • 4 Cloves Garlic; Crushed

Directions:

  1. Make garlic and oil mixture by peeling and smashing 4 large garlic cloves. In a small bowl, add smashed garlic cloves and olive oil to coat the garlic cloves to use as a dipping sauce. Add a few pinches of salt, mix until well combined. Set aside to marinade while you make plantains.

  2. Peel the plantains by scoring the plantain lengthwise around the plantain (without touching the actual flesh of the plantain), then use the knife to raise the skin and peel it off.

  3. Cut the plantains into thick slices, you can make straight cuts or slightly diagonal cuts.

  4. Heat the oil over medium high heat in a frying pan – use enough oil to almost cover the plantain slices. When oil is hot, add sliced plantains in pan. Cook for 2-3 minutes on each side. Should be lightly golden and not brown.

  5. Remove the plantains and place on plate.

  6. When still hot, press plantains with the bottom of a glass (or small bowl or a wood pestle) to smash and flatten the plantains, do this gently to keep the slices from breaking. When all smashed, place plantains back in frying oil and fry for another 1-2 minutes until reaches crisp golden color.

  7. Remove from heat and place smashed plantains on plate with paper towel to remove extra grease. Season with salt immediately!

  8. Serve with oil and garlic mixture on the side! Enjoy!
