Keto “Surprise!” Peanut Butter Brownie Bites

Nothing sounds better than a brownie! But what if your brownie had a surprise in the middle?! One bite of these mini brownie bites with a creamy peanut butter filling will knock your socks right off! Did I mention they’re Keto-friendly? Go ahead and treat yourself!


Ingredients:

  • 3/4 Cup of Blanched Almond Flour

  • 2 Eggs

  • 1/2 Cup Unsweetened Cocoa Powder

  • 1/4 Cup of Butter; Melted

  • 3/4 Cup of Monk Fruit Sweetener or Coconut Sugar

  • 1/2 Teaspoon Vanilla Extract

  • 1/2 Cup of Organic Smooth Peanut Butter

  • Pinch of Salt

  • Mini Muffin/Cupcake Tin

  • Freezer Bag & Pastry Tip (Optional)

Yields: 20 Mini Brownies
Prep Time:  5 Minutes
Bake Time: 12-15 Minutes

Directions:

  1. Preheat your oven to 350 degrees and grease your mini muffin/cupcake tin with cooking spray/coconut oil/butter.

  2. In a bowl, whisk together melted butter, sweetener, cocoa powder, eggs, and vanilla extract. Then stir in the almond flour until combined.

  3. Pour batter into the muffin tins and bake in the oven for 12-15 minutes.

  4. Let brownie bites cool in the pan for 10 minutes. While brownie bites are cooling, heat up peanut butter in a microwave-safe dish for 10-15 seconds. Continue 10-second intervals until peanut butter is slightly loose in texture. Then use a freezer bag as a piping bag by adding the peanut butter into one corner of the bag. If you have a pastry bag tip, feel free to add the tip to your bag before you add the peanut butter.

  5. When the brownie bites have cooled, remove from the muffin/cupcake tin. Cut a small corner of your freezer bag to start piping your peanut butter into the bottom of your brownies. With your pastry tip or with the opposite end of a spoon, create a small hole at the bottom of your brownies. Fill your brownies with a dab of peanut butter.

  6. Let your brownie bites settle for another 5 minutes and enjoy!
