No Bake Keto Cookie Dough Balls

This is the ideal recipe if you’re craving something sweet or if you want something to do with your little one at home. If you’re making with your kiddo, have your child help you measure, mix and roll! My 4 year old son loves to cook with Momma. He pulls his little stool up to the island and mixes all the ingredients for me and then helps roll the cookie dough balls in his favorite toppings. It’s adorable and so much fun!


There are tons of recipes out there for cookie dough balls, but I have found that this recipe has the right cookie dough consistency and is not only, no bake, but effortless to make.

This quick dessert is perfect for all ages and since there is no refined sugars in this recipe, it is even “sweeter” to indulge and share with friends.


Ingredients:

  • 1 Cup of Raw Unsweetened Cashew Butter

  • 1/2 Cup of Coconut Flour

  • 1/3 Cup of Organic Maple Syrup

  • 1/4 Cup of Dark Chocolate Chips

  • Wax or Parchment Paper

  • Optional: Coconut Flakes and Keto Organic Peanut Butter Powder


Serves:  4-6 People
Prep Time:  5 Minutes
Hardening Time: 20-30 Minutes

Directions:

  1. Mix the coconut flour, maple syrup, cashew butter and dark chocolate chips in a medium mixing bowl with a rubber spatula.

  2. When ingredients are thoroughly mixed, pop the bowl in the freezer while you prepare your container or platter lined with wax or parchment paper. This is also a good time to put away ingredients and get your side bowls ready with your toppings.

  3. After 5 mins or so, remove your bowl from the refrigerator and scoop the mixture into small - medium balls.
    (Tip: I used a melon ball scoop and then rolled them for a consistent look. The mixture yields about 12 small cookie dough balls.)

  4. At this time, roll all or some of your balls in your topping of choice to evenly coat all sides.

    (In this recipe, I rolled the cookie dough balls in slightly toasted coconut flakes and others in peanut butter powder. At this point, I made three different types of cookie dough balls; chocolate chip, coconut and chocolate, and Keto peanut butter chocolate chip.)

  5. When you’ve created all of your cookie dough ball varieties, place your platter in the freezer for 20-30 minutes.

    (Tip: It’s not necessary to freeze, but it will firm up nicely.)

  6. If you’re not serving after the 20-30 minutes are up, place the platter in the refrigerator until ready to serve. Enjoy!
