Vegan Orange & Blueberry Muffin Bites

This delicious muffin recipe comes from my sister, Leslie! Being quarantined has inspired her to channel her inner vegan baker! With this newfound baking passion, she immediately goes into her kitchen to find anything that inspires her. In her kitchen she spots oranges and blueberries that haven’t been touched in a couple of days and decides why not make melt in your mouth vegan orange & blueberry muffin bites! The perfect breakfast for beautiful Spring days!

When she sent me this recipe she wanted to preface that she hasn’t left her house in almost two weeks due to the Quarantine, so she had to be inventive and use what she had in her pantry.

“You might find a few ingredients below a little strange, but if there’s a will, there’s a way – a way to brighten and sweeten another day at home.” - Leslie

Ingredients

• 1  Cup Puffed Wheat Rice Cereal

• 1 Cup Freshly Squeezed Orange Juice

• 1 Teaspoon Grated Orange Zest

• 1 cup Olive Oil

• 3 Large Organic Free Eggs, Beaten

• 3 Cups of All-Purpose Flour

• 1 Cup Organic Cane Sugar

• 4 Teaspoons Baking Powder (Or 2 Teaspoons of Lemon Juice)

• 1 Teaspoon of Salt

• 1/2 Teaspoon of Baking Soda

• 3 Cups Fresh Blueberries

• 1 Tablespoon Ground Cinnamon

• 24 Mini Muffin Tin

• 1 Teaspoon Country Crock Oil Plant Butter (Used to butter the miniature-muffin tins or omit if you have muffin liners.)

 

Serves:  4 - 6 People (2 Dozen)
Prep Time:  10 Mins
Cook Time: 30 Minutes
Serve w/:  Favorite Cup of Joe

Directions

  1. In a big mixing bowl, mix the puffed wheat, orange juice, orange zest, olive oil, eggs, flour, sugar, baking powder (or lemon juice), ground cinnamon, salt and baking soda together. Fold in the blueberries and mix bowl lightly. 


  2. Butter the miniature-muffin tin before baking. Spoon batter or use a melon baller scoop to scoop into 24 mini muffin tins.


  3. Bake at 400°F for 20 minutes and your fork comes out clean when you check.


  4. Cool for 5 minutes and wait patiently.

    (Tip: This might be the hardest thing to do!)


  5. Enjoy your muffin with a cup of joe!



    (Tip: Want to be healthier and feel okay about eating 1 or 3 of these muffins? Swap the all-purpose flour with almond flour, and half the oil for ½ cup of unsweetened applesauce.)
