Paleo Apple Crumb Cake

One of my favorite memories I have as a kid is going apple picking with my family. Last year my husband and I decided to make these same family traditions with our own family.

Yesterday we went family apple picking and when we came back, I decided to make a Paleo Apple Crumb Cake with the crisp apples we picked. 

This Paleo favorite is made with good-for-you ingredients like almond flour, coconut flour, coconut sugar, & organic pure maple syrup. This delicate crumb cake is the prefect breakfast treat with your morning coffee!!

Crumb Ingredients:

  • 1 Cup of Almond Flour

  • 1/4 Cup of Coconut Sugar

  • 1/2 Teaspoon of Cinnamon

  • 3 1/2 Teaspoon Coconut Oil; Room Temperature

  • Pinch of Salt

Cake Ingredients:

  • 1 1/2 Cups Almond Flour

  • 1/4 Cup Coconut Flour

  • 1 Teaspoon of Baking Soda

  • 1 Teaspoon of Cinnamon

  • Pinch of Salt

  • 2 Large Eggs, Room Temperature

  • 1/4 Cup Coconut Oil, Room Temperature

  • 1/4 Cup Organic Pure Maple Syrup


Filling:

  • 3 Apples; Diced Small

  • 1/8 Cup of Coconut Sugar OR 1 Tablespoon of Organic Apple Sweetener

  • Coconut Oil Spray or Teaspoon of Coconut Oil

  • Pinch of Salt


Baking Items:

  • 8x8 Pan

  • Parchment Paper

  • Coconut Oil Spray


Servings: 9 Squares
Prep Time:  10 Minutes
Bake Time: 30-35 Minutes
Serve With: Coffee

Directions:

  1. Preheat your oven to 350 degrees. Then peel and dice your apples into very small bites. Spray or add coconut oil to your pan. Sauté your apples with your coconut sugar on Medium-Low heat until apples are slightly soften but not mushy; about 5 minutes.

  2. In a bowl, mix together all crumble ingredients and set aside.

  3. In a separate bowl, mix together all dry cake ingredients. Then add your eggs, coconut oil, and maple syrup to dry ingredients. Mix until combined.

  4. Line a 8x8 square pan with parchment paper and spray or grease with coconut oil.


  5. To your pan, add your cake mixture, followed by your sautéd diced apple and then sprinkle the crumble over top.

  6. Bake in your oven for 30-35 minutes. When a toothpick comes out clean, let your cake cool and cut into squares. Enjoy!
