Grandma Leonardo's Tomato Sauce

My husband’s grandmother’s red sauce left an impression on his childhood and adulthood. Although he only had a short time with his grandmother before she passed, her tomato sauce continues to radiate through the family all these years.

Ingredients

  • 3 Cans of Whole Peeled Tomatoes (Imported From Italy)

  • 1 Yellow Onion, Diced

  • 6 Cloves of Garlic, Minced

  • 3 Tablespoons of Olive Oil

  • 1 Teaspoon of Red Pepper Flakes

  • 1 Small Can of Tomato Paste

  • 3 Tablespoons of Dried Organo

  • Sea Salt & Cracked Black Pepper To Taste

  • 1 Large Pot

 

Makes:  10-12 Servings
Prep Time:  10 mins
Cook Time: 2 - 3 Hours Minimum
Serve w/:  Favorite Pasta (See OBX Hurricane Lasagna Recipe)  or add meatballs.

Directions

  1. Heat large dutch oven/pot on Medium Heat and then add olive oil to pot.

  2. Add the diced onion and cook until onion is translucent, about 5 mins. Then add the minced garlic and pepper flakes until garlic starts to perfume.

  3. Add whole peeled tomatoes, two heaping tablespoon of salt and pepper, followed by the oregano. Use a potato smasher to smash the peeled tomatoes. (Tip: If you prefer a smoother tomato sauce texture, use an immersion blender until smooth.)

  4. Bring tomato sauce to a boil and stir regularly. When reaches a boil, cover and reduce to simmer for a minimum of 45 minutes. (Tip: The Ideal time to simmer the tomato sauce would be for approximately 2-3 Hours. The longer the better.)

  5. Add your tomato sauce to your favorite pasta or freeze to use later!
