Keto Peanut Butter Cookies

When you’re craving peanut butter and need a quick fix, this easy cookie recipe is for you! Nothing too fancy- just straight up good!

This cookie recipe is Keto-friendly and can be Paleo by switching out peanut butter with cashew butter.

Ingredients:

  • 1 Cup Organic Smooth Peanut Butter or Cashew Butter (Paleo Version)

  • 1/2 - 3/4 Cup of Monk Fruit or Organic Coconut Sugar

  • 1/2 Cup of Almond Flour

  • 1 Egg

  • 1 Cookie Tray

Yields: 12-15 Cookies
Prep Time:  5 Minutes
Bake Time: 15 Minutes



Directions:

  1. Mix peanut butter, egg, and organic monk fruit or coconut sugar in a bowl.
    (Tip: If you like sweeter cookies, then add another 1/4 cup of sweetener to your batter.)



  2. Add in almond flour a couple of tablespoons at a time until mixture is not too wet.


  3. Use a melon ball scoop to scoop consistent balls or roll mixture into small round balls. Place balls on a greased lined cookie tray and use a fork to push down and create a criss-cross pattern on your cookies.


  4. Bake cookies in the oven for 15 minutes and let cookies cool before serving. Enjoy!
    (Tip: Cookies will harden when cooled.)
