Easy Chia Seed Pudding

This easy recipe is in honor of my toddler twin nieces who LOVE this dairy-free pudding! It’s made with good-for-you ingredients and a perfect treat for a Spring picnic!

Ingredients:

  • 2 Cups Almond Milk or Coconut Milk

  • 1/2 Cup of Chia Seed

  • 1 Teaspoon Vanilla Extract

  • 1 Tablespoon of Agave or Other Organic Sweetener

  • Pinch of Salt

  • Favorite Fruit

Yields: 6 Small Jars
Prep Time:  10 Minutes
Chill Time: 4 Hours or Overnight

Directions:

  1. Pour chia seeds in a bowl.


  2. In a separate bowl, whisk together milk, agave, vanilla extract, agave, and a pinch of salt.


  3. Pour mixture over chia seeds and mix well.


  4. Refrigerate for 4 hours or overnight until the milk-chia mixture has thickened.
    (Tip: At this point, you can evenly pour the mixture into small jars.)

  5. When the pudding has thickened, add your favorite diced fruit over top! Enjoy!
